Barolo DOCG

This single vineyard is totally east-facing, bringing it a lot of morning sun. The altitude of our 1ha large vineyard peaks above 500 meters above sea-level and the soil is characterized by white marl and large stones.
This terrain dries quickly, being of advantage in wetter vintages. Fossati Barolo is very balsamic, a powerful yet balanced wine.

Harvest: 
Hand-harvest into 20kg baskets
Winemaking: 
Traditional winemaking: warm fermentation in a concrete vat is followed by 35 days of maceration with submerged cap, an ancient technique whereby the cap of skins is submerged in the freshly fermented wine.
Wine maturation: 
The ageing takes place over 24 months in a 25hl Slavonian oak cask, followed by 7 months in concrete before bottling. Further bottle ageing before the wine is then released on the market.
Wine profile: 
Barolo Fossati distinguishes itself with its pronounced balsamic notes. It is intensely perfumed with elements of dark forest fruits and citrus. A powerful yet well balanced Barolo with a big tannic structure. Its elegance and freshness invites for another glass.
